
A tofu salad I made myself the other day, with carrots, cucumber, lettuce, onions, homemade croutons, red pepper and mayo. I've never made croutons myself, but after reading a recipe in a magazine, I knew I just had to try them out myself. And they're surprisingly easy to make! Unfortunately you have to use a lot of oil to get them to that crunchy state, but considering the rest of the meal is mainly veggies I didn't drown in guilt.
Here's a quick little 'recipe'/re-cap of what I did if anyone interested:
- Cut your bread into dices, and it doesn't have to be a new baguette as many recipes insists, you can just use old bread to avoid wasting food
- Make a dressing out of good amounts of olive oil, herbs (I use a mixture my friend got me in Provence, but oregano would do the trick), salt, pepper, a little bit of grounded chili for some kick and garlic
- Mix your bread in, and leave them to soak up the dressing for a quick minute or two
- Bake them in the oven for about 200 degrees for only a couple of minutes. They don't need that long, so make sure you keep a close eye on them
And a tip to avoid burning them like I did: about a minute or two in, depending on how effective your oven is, take them out and give them a toss to make sure they cook evenly.
Very easy to make, and spices up any boring salad.
